There are about two weeks in September when the garden is giving up and the orchard is just starting, and you can put both on the same table. That is this dinner.
Six courses. A board to stand around with a drink before anyone sits down — three-year cheddar and bourbon apple butter, chow chow, pickled Concord grapes. Then the last of the heirloom tomatoes with shell beans, delicata and maitake. A pork shoulder glazed in apple butter and carved onto boards down the middle of the table. Apple pie with cheddar in the crust, because in this part of Pennsylvania that is how it is done.
One cocktail made with apple brandy, and the same drink without it, made with the same care. One wine, poured with the pork.
Twelve seats at one long table. You will sit next to someone you did not arrive with. You will go home with a box.
