By October everything worth eating is underground. Roots, and fire, and not much else. That is the whole menu.
We light a fire five hours before you arrive and cook most of the dinner on the coals. Beets roasted in the embers and torn while still warm over whipped ricotta. Parsnip and pear soup with dark honey. Steelhead on the grate for eight minutes, skin crisp. A chuck roast turned over the fire for four hours. Sweet potato pie with maple.
One bourbon cocktail with a beet shrub and a smoked maple rim, and the same drink without the bourbon, made with the same care. One red, poured cold.
Twelve seats, dim candles, and not much other light. You will go home with a box, and in it a jar of smoked maple butter we make with our new finishing salt.
