This rich, savory blend is inspired by Mexico's ancient Aztec civilization, which used Cocoa and Chiles to create a spicy cocoa drink that is the stuff of lore. We source Cacao Nibs from Brazil's Amazon rainforest and mix them with Ancho Chiles from Guanajuato, Mexico to form a luxurious, bittersweet flavor base that boasts a mature, subtle heat. The addition of traditional Mexican spices balances the blend, paying respect to the flavors that inspired Mexico's famous mole sauces. We recommend this blend in meat and vegetable dishes, though it also makes a fabulous, exotic dry rub.

    Brazilian Cacao Nibs are ground to form our own 100% Cocoa powder. We mix it with toasted Ancho Chile to deliver a pleasant, tingling heat. Then we add freshly toasted and ground Cumin, Garlic, and Coriander to achieve a balanced earthiness, and finish with a touch of Hawaiian Cane sugar to round out the nutty bittersweet taste of the Cocoa in this deconstructed mole.

Cocoa & Ancho Rubbed Chops



  • Cocoa & Ancho Spice (2 tbsp)
  • Pork Chops (4)
  • Kosher Sea Salt (pinch)
  • Olive Oil (for drizzling)


  1. Season chops on both sides with a pinch of sea salt.
  2. Add spice and massage into meat.
  3. Lightly drizzle both sides with olive oil.
  4. Grill/cook meat until desired doneness.
