Apple and Blackberry Galette

Ingredients:

Crust

  • All Purpose Flour (2 cups)
  • Granulated Sugar (3 Tbsp)
  • Unsalted Butter, cold and cubed (16 Tbsp)
  • Salt (1/2 tsp)
  • Ice Water (4 Tbsp)
  • Vanilla Bean Sugar, to sprinkle

Filling

  • Sweet Apples, cored and sliced (3 medium)
  • Blackberries (1 cup)
  • Juice of 1/2 a Lemon
  • Vanilla Bean Sugar (2 Tbsp, separated)
  • Autumn Harvest Spice Blend (1 Tbsp)
  • Cornstartch (1 Tbsp)
  • Orange Zest (optional)

Directions:

  1. For the pastry crust, place flour, sugar, salt, and butter in your food processor and pulse until you have little beads or a breadcrumb-type texture. Add the ice water 1 Tbsp at a time until the dough sticks together when you pinch it. 
  2. Take the dough out of the food processor onto a piece of plastic wrap. Roll it out until it is in the shape of a disk that is about 1 inch thick. Place in the fridge for about an 45 minutes to an hour to chill. 
  3. While the the pastry crust is chilling, preheat the oven to 375 and begin coring and slicing the apples for the filling. 
  4. In a medium bowl take your sliced apples (you can peel them if you prefer them that way) and mix with the lemon juice, 1 Tbsp Vanilla Bean Sugar, Autumn Harvest, cornstartch, and orange zest, if you are using it. 
  5. In a separate bowl, combine your blackberries with the remaining 1 Tbsp Vanilla Bean Sugar. 
  6. Remove the crust from the refridgerator and plastic wrap onto a floured surface. Slowly roll out the dough into a circle, trimming the edges where needed. When done, place the dough on a sheet of parchment paper or a silicone mat on a baking sheet. 
  7. Arrange the apples in the center of the dough leaving about 2-3" of uncovered crust around the edge. Place blackberries as desired on the apples and begin folding the dough over the filling, working your way around the outside of galette. Sprinkle the outside dough with Vanilla Bean Sugar, as desired.  
  8. Bake the galette until the crust is golden and the fruit is well cooked, about 40-50 minutes. Remove from the oven and let cool to room temperature and enjoy!
