It’s an easy make-ahead recipe — build the base the night before, and pour over ice when you’re ready. Garnished with a thyme sprig and a couple of plump berries, it earns its place at the table.
Combine the Vanilla Bean Sugar and water in a small saucepan. Warm over medium heat, stirring, until the sugar fully dissolves — do not boil. Cool completely, then store sealed in the refrigerator for up to two weeks.
For the Mocktail
In a bowl, combine the simple syrup, blackberries, and thyme. Muddle well to release the berry juice and the herb oils. Let steep at room temperature for 30 minutes.
Strain through a fine mesh sieve into a pitcher. Stir in the lemon juice. (You can refrigerate the base, covered, overnight.)
To serve, pour about 3 ounces of the base over ice. Top with sparkling water.
Garnish each glass with a fresh thyme sprig and two blackberries.
