Ingredients (per cocktail)
1 oz Gin
1/2 oz Fresh lemon juice
1/2 oz Vanilla Bean Sugar simple syrup
1 oz Sonoma Syrup Co.'s Pomegranate Grenadine Simple Syrup
3 oz Champagne or prosecco, chilled
Pomegranate arils for garnish
Lemon twist for garnish
Fresh mint sprig (optional)
Vanilla Bean Sugar Simple Syrup
½ C Calicutts Vanilla Bean Sugar
½ C Water
Directions
Simple Syrup
Combine sugar, water, and vanilla bean (pod and seeds) in saucepan.
Heat over medium, stirring until sugar dissolves.
Simmer 5 minutes. Remove from heat and let steep 30 minutes.
Strain and refrigerate up to 2 weeks.
Cocktail
Fill cocktail shaker with ice.
Add gin, lemon juice, vanilla simple syrup, and pomegranate grenadine.
Shake vigorously for 15 seconds until well chilled.
Strain into champagne flute.
Top with champagne, pouring slowly.
Garnish with pomegranate arils and lemon twist.
Add mint sprig if desired. Serve immediately.
