Fried Chicken Wings
- 1lb Chicken wings
3 Tbsp Calicutts Fried Chicken Spice Blend, divided
- 2 C All purpose flour
- 1/2 tsp Baking powder
- 1 tsp Cornstarch
- Peanut oil, for frying, unless allergic
Rinse wings thoroughly and pat dry with paper towels.
Sprinkle 1 1/2 Tbsp Fried Chicken on wings toss to coat.
In a shallow dish, combine remaining Fried Chicken, flour, baking powder, and cornstarch.
Dredge each wing into the flour, squeezing gently to coat. Shake off excess flour.
Heat peanut oil in dutch oven to 350 degrees. When to temp, fry wings in batches (it usually takes me two) for 8-12 minutes or until meat thermometer reads 165 degrees at the center of the wing.
Place the wings on wire rack to drain and serve.
