Ras el hanout is a traditional spice blend found throughout northern Africa. In Arabic, "Ras el Hanout" translates to "head of the shop", closely aligning with the expression "top-shelf" to denote that the mixture includes the spice maker's best spices. There is no set recipe and the ingredients are always determined by what spices are available to the spice maker. Our interpretation of this heritage blend is most closely associated with Moroccan cuisine. Fifteen different spices are toasted and ground to create an intensely rich blend of spices with deeply savory, and warm, comforting notes of sweetness. We suggest using it to season meats and vegetables, but be prepared, it's aromatics and flavor are incredibly potent; a real testament to the virtue of using spices which are freshly toasted and ground.

Cumin, Coriander, Ajwain, Peppercorn, Turmeric, Fenugreek, and Paprika ground this blend in a rich earthiness, while Cardamom, Nutmeg, Ginger, Allspice, Cinnamon, and Clove offer a natural warm sweetness. The inclusion of Grains of Paradise and Rose Petal, two Moroccan-sourced crops, creates a beautiful fragrant top note while also adding to the blend's overall flavor depths.
