Smoky braised white beans with greens and sausage is the first cozy one-pot dinner of the season — cheap, hearty, and deeply savory. Ingredients

  • 1 lb Sausage (Italian or your favorite)

  • 2 Tbsp Olive oil, divided

  • 1 Onion, diced

  • 1 Carrot, diced

  • 1 stalk Celery, diced

  • 3 cloves Garlic, minced

  • 1–2 Tbsp Calicutts Backyard Blend

  • 1 (14-oz) can Diced tomatoes

  • 2 (15-oz) cans White beans (cannellini), drained

  • 3 C Chicken broth

  • 1 bunch Kale, stemmed and torn

  • Grated Parmesan

  • Calicutts Smoky Maple Finishing Salt

  • Crusty bread, to serve

Directions

  1. Heat 1 Tbsp oil in a heavy pot over medium-high. Brown the sausage well, ~6 minutes; remove and slice.

  2. Add the remaining oil; soften the onion, carrot, and celery 5 minutes. Add the garlic and Backyard blend; cook 1 minute.

  3. Stir in the tomatoes and cook 3 minutes. Add the beans, broth, and sausage; simmer 15 minutes to meld.

  4. Stir in the kale and cook 3–4 minutes, until wilted. Mash a few beans against the side of the pot to thicken the broth.

  5. Ladle into bowls and finish each with grated parmesan and a pinch of Smoky Maple Finishing Salt — richness against the smoky broth. Serve with crusty bread.
