Ingredients
2 Zucchini, sliced lengthwise into 1/4-inch planks
2 Yellow squash, sliced lengthwise into 1/4-inch planks
2 Red bell peppers, quartered and seeded
1 Red onion, sliced into 1/2-inch rounds
1 lb Asparagus, woody ends trimmed
1/4 C Olive oil
2 Tbsp Calicutts Golden Goddess blend
2 Tbsp Balsamic vinegar
2 Tbsp Honey
2 Tbsp Fresh basil, chopped
1/4 C Crumbled feta cheese
Directions
Preheat grill to medium-high heat.
In a small bowl, whisk together olive oil and Golden Goddess blend.
Brush vegetables with oil mixture and grill in batches: Zucchini and squash: 2-3 minutes per side
Bell peppers: 3-4 minutes per side
Red onion: 4-5 minutes per side
Asparagus: 2-3 minutes total, rolling occasionally
Arrange grilled vegetables on a platter.
In a small bowl, whisk together balsamic vinegar and honey. Drizzle over the vegetables.
Sprinkle with fresh basil and feta cheese if using.
