Combine the chicken, olive oil, Golden Goddess Blend, lemon juice and zest, and salt in a large zip-top bag. Massage to coat. Marinate 4–24 hours in the refrigerator.
Thread the chicken onto the soaked skewers, 4–5 pieces per skewer.
Heat a grill or grill pan to medium-high. Grill the skewers about 4 minutes per side, until cooked through with good char marks.
Squeeze fresh lemon over the platter as the skewers come off. Garnish with parsley and lemon wedges, and serve.

1½ Tbsp Olive oil

About 12 bamboo skewers, soaked in water for 30 minutes
