In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, salt, and cumin. Process for 4 minutes — long enough to get truly silky. Add ice water 1 tablespoon at a time if it’s too thick. Taste and adjust the salt and lemon.
Refrigerate at least 1 hour so the flavors settle.
Spread the hummus in a wide shallow bowl, swooping with the back of a spoon to create grooves.

3 cans (15 oz each) Chickpeas, drained, with ⅓ cup of the liquid reserved
½ C Tahini
⅓ C Fresh lemon juice
3 Cloves garlic, grated
½ C Olive oil, plus more for finishing
1½ tsp Fine salt
¾ tsp Cumin, ground
Ice water, as needed
For Finishing
