In Hindi, "masala" refers to a mixture of spices, while "garam" conveys warmth. Thus, Garam Masala is a warm blend of spices. Our interpretation of this traditional blend is most closely associated with the Punjab region of Northern India. We slow-toast all the spices to bring their flavors to the surface, then freshly grind them all together. Coriander, Cumin, Bay Leaf, and Nigella offer a robust earthiness, while Peppercorn lends a musky bite. Clove, Korintje Cinnamon, Nutmeg, and Star Anise provide warm notes of sweetness, and Black Cardamom adds a slight undertone of smokiness. We love this blend when used in savory meat and vegetable dishes.

    We start by separating the hulls of Green and Black Cardamom pods to release their inner seeds. These seeds are added to a mixture of whole Coriander, Cumin, Peppercorn, Bay Leaf, Star Anise, Nigella, Clove, Nutmeg and Cinnamon stick, and slow-toasted over gentle heat until their essential oils release a warm and aromatic fragrance. Afterwards, we freshly grind all of the spices together to produce this truly authentic spice blend.

Spiced Apple Crisp

Ingredients:

  • Indian Garam Masala Spice (tsp)
  • Butter (3 tbsp)
  • Apples (3, chopped)
  • Pecans (1/2 cup, chopped)
  • Walnuts (1/2 cup, chopped)
  • Maple Syrup (2 tbsp)

Directions:

  1. Preheat oven to 350°. Melt 2 tbsp of butter in cast-iron skillet over medium heat. Add chopped apples, and spice. Saute for 5 minutes until apples soften.
  2. Remove skillet from heat. Combine pecans and walnuts, and sprinkle over top apples. Melt remaining tbsp of butter, and combine with syrup. Drizzle over top pecan and walnut topping.
  3. Bake for 15 minutes.
